Ingredients

  • 300g dried apricots, 200g Bramley Apples, 100g sugar.
  • 500g short crust pastry

Apricot and Apple Pies

These pies are ideal for picnic. It is also delicious when serve warm with cream as a pudding.

Method

1. Peel and chopped the apples into pieces. Put in a pan, cooked gently till soften. Add the sugar.
2. Add in chopped apricots. Simmer for 2 minuts. Leave the pie filling to cool.
3. Roll out the pastry to to 1 cm thickness. Line 6 small individual foil pie dishes or 1 large pie plate.
4. Trim off excess pastry.
5. Put the cold apricot and apple filling in the centre of the lined pie dishes.
6. roll out the trim off pastry and cut into strips.
7 Place the pastry stipes on top of the filled pie dishes cris-crossing each other.
Bake the pie in moderate oven gas mark 6 350C for 30 minutes. Delicious serve with cream.
