Ingredients
- 250g digestive biscuits
- 150g melted unsalted butter
- 750g cream cheese
- 150g castor sugar
- 6 large eggs (free range)
- 2 teaspoons of vanilla extract (not flavouring)
- 250ml sour cream
- 150ml whipping cream (for the topping)
- Plenty of mixed summer fruits to taste about 450g
- Icing sugar for dusting
Summer Fruit Cheesecake
This is a delicious dessert for all the family and in particular for a dinner party where you want/need to impress. When it is brought to the table it has instant "WOW" factor and it tastes as good as it looks.

Method
1.Mix together crushed biscuits, melted butter and four tbs castor sugar.
2.
Press into a Springform cake tin.
3.
Refrigerate for at least ½hr to set.

Heat oven to 170 degrees/gas mark 3 (check if your oven heats hotter or cooler than average and adjust accordingly.

Mix together all remaining ingredients including remaining castor sugar but omitting whipping cream and fruit. Note: if you have the time and inclination, separate the egg yolks from the egg whites and whisk the whites until they form peaks. Whisk in the egg yolks then fold in the whisked whites.

Scoop this mixture onto the chilled set base.

Bake for 1 - 1½hrs (know your oven) without opening the door. The cheesecake should be golden brown on top.

Turn off the oven and let the cheesecake stand in the oven for about another 1½hrs.
9.
Remove from the oven and let cool.
10.
Chill for a few hours or overnight preferably.
11.
Push up the base of the Springform tin, carefully remove the cheesecake and display on a serving plate - the bigger the better as you may want to display fruits around the cake as well as on top.
12.
Whip the whipping cream until it forms peaks - coat the top of the cheesecake and sides if you prefer.
13.
Decorate with summerfruits - strawberries present better if sliced in halves.
14.
Dust with icing sugar.
