Ingredients

  • 125 g butter/margarine
  • 1 cup of tea
  • 125 g sugar
  • 1 teaspoon mixed spice
  • 250 g mixed fruit
  • 250 g self raising flour
  • 1 teaspoon bicarb of soda
  • 1 egg

Moist & sticky fruit cake. Quick and easy to bake.

Method

Pre heat oven to 180 deg c/gas mark 4. Grease and line an 18 cm/7" round tin. Melt butter in pan. Add fruit and tea. Bring to the boil then simmer for 2 minutes. Cool. Sieve dry ingredients and add boiled mixture and egg. Mix well. Spoon into prepared tin and bake for 75 mins.
