Ingredients

  • 1 x Dr. Oetker SuperCook Bake in the Box Lemon and Poppyseed Cake Mix
  • 115ml (4fl.oz) semi skimmed milk
  • 4 tbsp good quality lemon curd
  • 100g (4oz) icing sugar
  • A few drops Dr. Oetker SuperCook Natural Orange Extract
  • Approx. 1 tbsp warm water
  • A few drops Dr. Oetker SuperCook Natural Yellow Food Colouring (optional)
  • Dr. Oetker SuperCook Orange and Lemon Slices to decorate

Method

- Preheat the oven to Gas Mark 4/180 C/350 F or 160 C for a fan assisted oven.

- Make up the cake mix as directed on the box and cook for as directed until golden brown. Remove from the oven and leave to cool completely, then remove from the box and carefully slice through the middle.

- Spread the bottom half with lemon curd and then sandwich together with the top piece. Place on a serving plate.

- Sift the icing sugar into a bowl, add a few drops orange extract and gradually blend in sufficient water to make a smooth, spreadable icing. Add a few drops food colouring if using.

- Spread all over the top of the cake, allowing it to dribble down the sides; arrange orange and lemon slices on the top to decorate, and stand aside for a few minutes to set before serving.
